About this wine 

Fantastic Riesling from Itterswiller in Alsace! Deep, structured, and with outstanding balance. Grapes are harvested on the 25th of December from a 35-year-old parcel, and subsequently, the white grapes are pressed upon arrival at the winery. The juice is then cooled to 10/12°C for 12 hours. This process allows time for the solid particles to settle by gravity at the bottom of the tank.

Afterward, the clear juice is put directly into a barrel. The temperature rises naturally, initiating alcoholic fermentation, which will take place slowly in the barrels. Batonnage will be carried out every week during fermentation to put the fine lees back into suspension, aiding the fermentation process. Aged for approximately 10 months in old barrels.
