Theo Coles, ladies and gentlemen! And what a guy! By our opinion he is producing some of the most up to date and vibrant wines from New Zealand.
Theos wines are produced in North Canterbury at the south Island of New Zealand, probably one of the most beautiful places on planet earth. He is using organic principles with some biodynamic elements in the farming. In the cellar Theo doesn't really have a recipe, but one thing is for sure - experiments are ongoing procedure throughout the vinification of his wines. He works with maceration of the skins, fermentation and aging in the different tanks, vats and barrels and also different ways to ferment especially the red wines.
Basically, and also what Theo describes as his motto; there are no rules except that the results must be delicious! Try his wines so you can determine if he follow that single rule.
