2020 Pinot Noir "Cathedral"

About this wine

It is not fair to call this an entry level wine, nonetheless that's what it is. But a rarely seen high level for an entry level wine. Finesse, elegance and purity. The grapes are harvested from Upper Goulburn and Mornington Peninsula, before getting destemmed but not crushed. Fermented in wooden and stainless steel vats. Then pressed after 30 days and fermented in stainless steel. No fining nor filtration, only minimal sulphites at bottling.
