Le vin de deux is our beloved Chablis producer! Their little domain is located in Fleys, a small and beautiful village, in between the three premier cru vineyards Mont de Milieu, Les Fourneaux and Vaucoupin.
Valerie inherited the vineyards by her mother in 2010, and farms them organically with her husband Bill. The vines have always been farmed organic and with everything done by hand. 1 hectare in total divided on the premier cru vineyard Mont de Milieu and on the AOP Chablis, just outside Fleys.
The vinification is old-school and slow, just like the winemakers want it to be. After the gentle press, the wines ferments and ages in old wood barrels in two years before they are bottled. At the bottling they add a very low amount at sulphur, but is as close to nothing as you can get.
