SEIICHI SAITO
If you haven't tried these fantastic wines from Seiichi, go ahead!
Seiichi is from Japan with Chinese roots and came to France to study at the wine school in Beaune in 2006. After he finished his degree he decided to stay in Burgundy, but until he started his own domaine he worked for some great producers. Among the best some to mention is Armand Rousseau and Leflaive.
Since 2017 he has been working on his own project, Domaine Petit Roy. From here he managed to buy two hectares and then he buy grapes on the side as well.
He is producing an amazing Aligoté, a Bourgogne Blanc and a Saint Romain fra the parcel "En Chevrot". Among the reds he is producing great Bourgogne Rouge from parcels near Volnay as well as wine from Hautes-Côtes de Beaune, Chorey Les Beaune and Savigny Les Beaune!
He is farming biodynamically and mostly does wholecluster fermentation. He doesn't extract the wines to much in order to keep more finesse and elegance to his wines. Everything is bottled unfined and unfiltered and only with a dash of sulphites at bottling.
