Just outside Nuits-Saint-Georges, you will find the small village of Chaux. Here, Nicolas Raspiller produces his beautiful Burgundy wines. Nicolas started his own domaine in 2017 after gaining experience in winemaking with several producers in both Burgundy and Champagne.
Nicolas immediately converted all vineyards to organic farming and implemented more natural and sustainable growing techniques for cultivation. In addition to winemaking, he has been producing honey and has been a beekeeper for many, many years. Now you probably also understand the meaning behind the label on his wines!
In the cellar, Nicolas works as naturally as possible. This means using indigenous yeast for fermentation, with no artificial additives or anything else added during vinification. Fermentation takes place in either stainless steel tanks or old barrels. The wines age in old barrels, are lightly filtered, and then bottled with minimal addition of sulfur.
In Nicolas's lineup, you will find bottles from appellations like Bourgogne Aligoté, Hautes Côtes de Nuits blanc, Bourgogne Passetoutgrain, Coteaux Bourguignons, Bourgogne Rouge, and Hautes Côtes de Nuits rouge. In addition to these mentioned appellations, we will highlight his unsulfured Aligoté. That wine is a true standout!
