Crafted with care, this wine undergoes a whole-berry ferment with native yeasts for three weeks under heavy CO2, preserving its vibrant character. Minimal juice movement allows for a partial carbonic ferment, delivering a perfect balance of tension and a naturally rich color and body. Australia + Alsace = Aussiesace!?
