About this wine

Sublime Chardonnay from what we think is one the best at producing Chardonnay in Australia! Winemaking: hand-harvested grapes in 15kg baskets and carefully transported to the winery. The grapes are whole-cluster pressed, and the juice is transferred to a tank for settling. Primary fermentation takes place in barriques (30% new) over three weeks, followed by full malolactic fermentation. The lees are stirred twice toward the end of primary fermentation and once more after malolactic fermentation is complete.
