About this wine

This Bourgogne Aligoté comes from three carefully selected plots in Savigny-lès-Beaune and Échevronne: Les Boutières, Perrières, and En Nair. Vines range from young plantings in the 1980s to old vines from 1934, all farmed biodynamically or organically. The soils are clay and limestone, producing fresh, tensioned fruit with a beautiful minerality. The 2023 vintage brought a warm summer, perfect ripening, and excellent balance. Total production is 6,500 bottles.

Vinification follows Seiichi’s signature style: pneumatic pressing for 1.5 hours, cold settling at 10 °C for 12 hours, then fermentation with indigenous yeasts in 228L and 500L barrels over 60 days at 10–20 °C. The wine ages 12 months in barrel and 7 months in stainless steel. It is not clarified, lightly filtered, and receives only minimal sulphur at bottling — a total of 30 mg/l.
