2023 Bourgogne Blanc "Challenge"
About this wine
Bourgogne Blanc — just as it should be, and even more than that. The grapes come from two declassified lieu-dits in Savigny-lès-Beaune: Les Boutières and Les Chevrières. The vines are young on both plots, yet you would never guess it from the wine. Depth, complexity and balance are the key words.
Vinification follows Seiichi’s classic approach: seven months in stainless steel, followed by 12 months in 228L old barrels. The wine is not fined, undergoes very gentle filtration, and receives just a small touch of sulphur at bottling, with a total of 27 mg/l.
